Maria Abbate Paolo, pastry chef from Polignano a Mare, loves to play with ingredients and seasons. For Wilden.herbals, Maria Abbate Paolo created a morning shortbread, using Remedium n.0 – Morning as the base for the infusion. The result is a fragrant and tasty biscuit, simple like good homemade things. Fragrant as a gentle awakening.

“I decided to create a simple recipe that could be easily replicated. It is a shortbread, the main product with which we accompany Wilden infusions here: a simple biscuit, ideal to accentuate the aroma of Remedia and live a 360 ° taste experience. The chosen Remedium – I used the Morning – can be left to infuse in the cream and then removed or crumbled directly into the dough, according to the preferences of each.”


  • 300 g flour

  • 150 g butter

  • 100 g brown sugar

  • 30 g egg yolk

  • 40 g cream

  • 1 Remedium n.0 – Morning teabag


First mix the flour and butter until a sandy mixture is obtained. Then add the sugar and then the liquids, cream and yolks. Finally, add a packet of Remedium n.0 -Morning. If you do not like the pieces of whole herbs, you can put the infusion in the cream for a few hours and filter it before using it.

Then rest the dough for at least 3 hours in the refrigerator, roll it out with a rolling pin and with the help of a mold make the biscuits. Bake at 160 degrees for 10/15 minutes.
