Morning shortbread
With Wilden.herbals and Maria Abbate Paolo
Maria Abbate Paolo, a pastry chef from Polignano a Mare, loves to play with ingredients and seasons. Hers is a revolutionary approach, experimenting, testing and following the flow of intuition and curiosity. For Wilden.herbals, Maria Abbate Paolo created a morning shortbread, using Remedium No. 0 – Morning as the base for the infusion. The result is a fragrant and tasty cookie, as simple as good homemade things. Fragrant like a gentle awakening.
“I decided to create a simple recipe that could be easily replicated. It is a shortbread, the princely product with which we accompany Wilden infusions here at our place: a simple cookie, ideal for accentuating the aroma of Remediums and having an all-around taste experience. The chosen Remedium – I used Morning – can be left to infuse in the cream and then removed or crumbled directly into the dough, depending on one’s preference.”

Ingredients:
- 300 g flour
- 150 g butter
- 100 g brown sugar
- 30 g yolk
- 40 g cream
- 1 sachet of Remedium No. 0 – Morning

Procedure:
First mix the flour and butter until a sandy mixture is obtained. Next add the sugar and then the liquids, cream and egg yolks. Last, add a sachet of Remedium No. 0 – Morning. If you do not like whole herb bits, you can steep the sachet in the cream for a few hours and strain it before using.
Then let the dough rest for at least 3 hours in the refrigerator, roll it out with a rolling pin, and with the help of a mold make the cookies. Bake in a 160° oven for 10 to 15 minutes.
