Boost Fillet of Shrimp
With Wilden.herbals and Franco Montaldo
Reading the ingredients of the Remedies, the pairings came to me naturally: in Remedium Boost there is lemongrass, which in Asian cuisine is always paired with fish, a pairing that I in turn wanted to propose.
Franco Montaldo

Franco Montaldo is a chef-à-porter who loves purity and seeks the good in nature. Based in Bologna, he loves to experiment and his Pure&Food project tells all about his love for the wild. For Wilden.herbals, he played with the Asian reverberations of lemongrass in combination with fish.
Ingredients:
- 1 infusion Remedium No. 2 – Boost
- 1 fillet of shrimp
- 30 g of breadcrumbs
- Oil extra virgin olive oil
- 1 potato
- 200 g beets
Procedure:
First, roast in a frying pan the Remedium No. 2 Boost. With this step done, add the breadcrumbs, evo oil and previously toasted Remedium to a food processor.
Then sprinkle the shrimp fillet with the resulting mixture and bake for 8 to 10 minutes until golden brown.
As a side dish, boil chard and sauté it with evo oil and garlic. Dice the potatoes and brown them in a frying pan with a drizzle of oil on all sides and bring to a simmer.
Plate by laying the ombrine fillet on top of the chard with the potatoes next to it.
