Croaket Fillet with Boost

Reading the ingredients of your Remedia, some combinations came to me spontaneously: in the Remedium n.2 – Boost, used in this recipe, there is lemongrass, which in Asian cuisine is always combined with fish, a combination that I wanted to propose in my turn.
Franco Montaldo
Franco Montaldo is a chef-à-porter who loves purity and looks for the good in nature. Based in Bologna, he loves to experiment and his Pure&Food project tells all his love for the wild. For Wilden.herbals he plays with the Asian reverberations of lemongrass in combination with fish.
Ingredients:
- 1 Remedium n.2 – Boost teabag
- 1 fillet of croaker
- 30 g of breadcrumbs
- Extra virgin olive oil
- 1 potato
- 200 g of chard
Preparation:
First, toast the Remedium n.2 – Boost in a pan. After this step, add the breadcrumbs, the extra virgin olive oil and the previously toasted Remedium in a chopper.
Then sprinkle the croaket fillet with the mixture obtained and bake for 8/10 minutes until golden brown.
As a side dish, boil the beets and sauté them in a pan with extra virgin olive oil and garlic. Cut the potatoes into cubes and brown them in a pan with a drop of oil on all sides and cook.
Serve by placing the croaket fillet on top of the chard with the potatoes as side dish.
