Nectar of the gods, that’s what honey was called, an ingredient that has been with us since prehistoric times when it was used not only for the preparation of food and beverages but also as a medicine, beauty product or even currency.

Even today for us it represents a small miracle of nature. It is one of the first foods that from an early age we learn to recognize and request not only for its taste but also because it helps in so many situations, such as when coughs, colds, stomach aches but also stress or anxiety appear.

And with this presentation, how could it not be one of our products of choice? When the beneficial properties of medicinal herbs are combined with the precious properties of honey, herbal tea becomes a true elixir of well-being. Any infusion can be sweetened with honey, indeed we prefer it and recommend it instead of sugar also because it is less caloric and more energetic. But not all honeys are the same! We tell you a little about the ones we have selected for our shop and give you suggestions on how to combine them with our herbal teas, but remember: everything is allowed in the kitchen, experiment and find the combination that best suits you and your loved ones.

Wildflower honey: flavor, properties and pairings

Wildflower honey s a delicious blend of nectar collected from a variety of different flowers. This variety is loved for its versatility and its ability to adapt to so many tastes and flavors. Its color can vary from light golden to dark brown, depending on the flowers that have been visited by the bees.

Nutritionally, wildflower honey is rich in antioxidants, vitamins and essential minerals. Its antimicrobial and anti-inflammatory properties make it a good ally for general health and strengthening the immune system. Its mild, sweet flavor goes well with yogurt, toasted bread slices and cookies. We like to pair it, for contrast, with the more pungent and lingering flavors of Remedium n.0 – Morning and Remedium n. 4 – Hangover.

Ivy honey: flavor, properties and pairings

Ivy honey is a unique and very special treasure; it is made from the nectar of ivy flowers that bloom in the fall, a valuable source of sustenance for the bees that are preparing for the winter. It has a bitter aftertaste and is more intense than other more classic types of honey.

Ivy honey is appreciated for its therapeutic properties. Its antibacterial and anti-inflammatory properties make it a valuable ally for the respiratory tract during the colder months of the year; it can help relieve coughs and soothe throat irritation. We like to combine it with Remedium n. 2 – Boost, by chefs it is used for special sauces and desserts.

Coriander honey: flavor, properties and pairings

Coriander honey is produced from the nectar collected from the flowers of this aromatic plant widely used in cooking. It is characterized by a bright golden color and an almost spicy flavor that combines notes of sweetness and spice.

Coriander honey is valued for its digestive and invigorating properties. It is known to relieve stomach discomfort, such as the feeling of heaviness after a large meal. So you will not be surprised to learn that we find it perfect for Remedium n. 3 – Digestive and Remedium n. 8 – Reborn. It also goes very well with cheeses, salads, meats and desserts.

Honeydew  honey: flavor, properties and pairings

Honeydew honey has a unique and complex character that captures the wild and aromatic essence of the woods. It is distinguished by its dark, intense color that can range from brown to black. Its texture is often thick and grainy, giving it a rustic and authentic note.

Its flavor is deep and rich, with robust, bold notes. It features accents of caramel, wood, and even a slight hint of spice.  It is perfect for bold culinary pairings. It can be used to enrich the flavor of savory dishes such as aged cheeses, smoked meats or hearty salads. It is also an excellent choice for desserts such as cookies, cakes and custards. For us, it works with all kinds of herbal teas, and we recommend it for those who really want to take a moment of wellness and immerse themselves in nature.

Honeysuckle honey: flavor, properties and pairings

Honeysuckle honey is defined by a blond color that can range from pale yellow to golden amber and a soft, creamy texture. It has a delicate taste, punctuated by mild floral notes.

It is rich in antioxidants, vitamins and minerals that help support the immune system and fight oxidative stress. Honeysuckle honey can be paired with fresh cheeses and cured meats. We suggest using it to sweeten a cup of Remedium n. 1 Night or Remedium n. 5 Focus.

Alpino honey: flavor, properties and pairings

Alpino honey combines the sweet taste of acacia honey with the intense aroma of bud with the essential oils of mountain pine. This combination creates a synergy of taste and fragrance that is a real treat for the senses. Acacia honey has a characteristic light color and a very delicate texture, its sweet and slightly floral flavor here is mixed with a touch of depth and freshness given by the mountain pine bud that give the blend a resinous and woody aroma.

This honey has the same therapeutic properties associated with mountain pine, such as the ability to relax and soothe the senses. Its ideal pairing for us is with Remedium n. 5 – Relax but it is also worth trying alone or to flavor creams and desserts.

Two final notes before making your herbal tea

We recommend that you add honey only when the drink has reached the optimal temperature for drinking, not when the water is still piping hot. The reason is more related to a scientific issue than to taste: the enzymes and vitamins in honey are heat-sensitive, that is, they degrade when they come in contact with high temperatures.

Don’t forget that honey is also perfect for sweetening a cold herbal tea. Whether you start with a hot brew or prepare a cold brew, honey always remains an excellent ally of our medicinal plants.
