Ingredients:
- 4 eggs + 3 yolks
- 300 g white sugar (or a mix of white and mascobado
- 300 g cream
- 1 kg cream cheese
- A pinch of salt
- 1 tablespoon corn starch or 00 flour
- 2 sachets of Remedium No. 1 – Night
Procedure:
- Infuse two herbal tea bags directly into the cream 12 hours before starting the cake preparation. It is like a cold infusion, takes longer but is a great way to flavour milk products or vegetable drinks.
- Preheat the oven to 200°C and prepare the cake tin by lining it with baking paper, making sure it adheres perfectly on all sides.
- In a bowl, whip the cream cheese with the sugar on medium-low speed (it is also OK if you do this by hand) until you obtain a homogeneous mixture in which the sugar has completely dissolved.
- Increase the speed slightly by adding one egg at a time, making sure to incorporate it well before adding the next one.
- Reduce the speed and add the cream and a pinch of salt.
- Sift the flour or starch and add it to the mixture, continuing to mix by hand. The result should be a smooth, homogeneous and silky cream.
- Pour the cream into the cake tin and place it in the oven until the surface is golden brown. The baking time is between 60 and 65 minutes, and don’t worry if you find that the cake is still a little soft, that’s exactly the desired effect!
- Let cool before removing the baking paper covering the sides.
- Serve at room temperature.
