Cheesecake + Remedium Herbal Tea No. 1 – Night

Ingredients:

  • 4 eggs + 3 yolks
  • 300 g white sugar (or a mix of white and mascobado
  • 300 g of cream
  • 1 kg of cream cheese
  • A pinch of salt
  • 1 tablespoon cornstarch or 00 flour
  • 2 sachets of Remedium No. 1 – Night

Procedure:

  1. Infuse two sachets of herbal tea directly into the cream 12 hours before starting the cake preparation. It is like a cold brew, takes longer but is a great way to flavor milk or plant-based beverage products.
  2. Preheat the oven to 200°C and prepare the cake pan by lining it with baking paper, making sure it adheres perfectly on all sides.
  3. In a bowl, whip the cream cheese with the sugar on medium-low speed (it is okay if you do it by hand) until you get a smooth mixture in which the sugar has completely dissolved.
  4. Increase the speed slightly by adding one egg at a time, making sure to incorporate it well before adding the next.
  5. Reduce the speed and also add the cream and a pinch of salt.
  6. Sift the flour or starch and add it to the dough, continuing to mix by hand. The result must be a smooth, homogeneous and silky cream.
  7. Pour the cream into the cake pan and place it in the oven until the surface is golden brown. The baking time is between 60 and 65 minutes, and don’t worry if you find that the cake is still a little soft, that’s exactly the desired effect!
  8. Let cool before removing the baking paper covering the sides.
  9. Serve at room temperature.

Ps: you can also prepare it the day before, taste and texture will be the same, while you will be more relaxed!
