Curry & Rice with Remedium n.8 Reborn

Reborn's flavour profile is ideal for a Curry and Rice. Paired with coconut milk, it's a fantastic combination!

Cooking the rice in Reborn broth will increase aromas and we’ll obtain deeper flavours. This curry could be vegetarian or meat based. If so, we recommend marinating the proteins (tofu is an option too!) a few hours before with the Reborn herb mix!

Ingredients

For the rice

200 gr Jasmine Rice
300 ml water
1 Reborn
Salt to taste
Oil

For the curry

2 garlic cloves
1 onion
1 eggplant
1 zucchini
Optional: Green beans/mushrooms/Broccoli/carrots
1 Reborn
200 ml Coconut milk
50 grams Peanuts
Basil to finish
1 Lemon, cut into slices

Instruction

For the rice

  1. Prepare 300ml of water infused with Reborn for 7 minutes.
  2. In a pot over medium heat, add a splash of olive oil and the rice. Stir till coated and shiny. Rice should become peal looking. Add the infused water and a pinch of salt.
    Bring to a boil. Reduce temperature to minimum and cover for 11 minutes.
  3. Turn the heat off and let sit, still covered for 11 more minutes. Rice will be fragrant and aromatic.

For the curry

  1. In a different pan, add oil, sliced garlic cloves and onion. Add the cut vegetables and the Reborn bag. Saute vegetables for 2 minutes.
  2. Add coconut milk. Let cook for 20 minutes till vegetables are tender.
  3. Remove from heat, and remove the Reborn bag.
  4. Serve the curry with rice on the side. Finish with crushed peanuts, basil and a lemon wedge.
