Caponata (180g)


More than a dish, the symbol of Sicilian summer, the maximum exaltation of the aubergine. This caponata includes the use of Noto almonds (Slow Food presidium) instead of the more common pine nuts, a strategic choice that opt for an ingredient closer to the Syracusan territory of Fratelli Ferrante.

This recipe follows the preparation typical of eastern Sicily, made without tomatoes but with a sweet and sour note that creates great balance.

How to use it

As a single element it is a tasty side dish, in the preparations it goes well in couscous, with blue fish or with rabbit.
