A honey with vegetal fragrances of root, pine and fir needles and licorice. The taste initially recalls mushrooms, with a sweetness mitigated by herbaceous notes and a final reference to cinnamon and fresh resin. It is among the richest honeys in glucose, the main element behind the crystallization of honey and its melting structure.
How to use it
To be added at the end of cooking to a vegetable soup; ideal with blue cheese.
It is a winning ingredient in marinades for bbq together with pepper, vinegar and extra virgin oil or to soak the anchovy in the filling of fried courgette flowers.
Combine it with walnuts and blue cheese for the filling of fresh ravioli or use it in the preparation of a gingerbread, instead of sugar.
