A honey with a strong personality and reminiscent of pain d’épices and gomasio (salt with sesame seeds). From its aromatic bouquet emerges a light smoky note and a fresher final tip of cedar peel and coconut milk. On the palate there is a refreshing and persistent hint of citrus and it is well balanced between sweet and salty.
How to use it
It goes well with egg-based recipes or fried foods. In the kitchen it is particularly suitable for a spicy marinade for grilled meats, or together with vinegar and spices in a chimichurri (sauce with parsley, oregano, garlic and chilli pepper) to wet the asado while it is cooking.
With chopped fresh thyme it is ideal if you want to flavor red meat and game sauces.
