A honey characterized by floral aromas (chrysanthemum and daisies), but also by earth, peat and cut bark and, in the finish, by pungent hints of macerated flower stalk. On the palate it is mildly sweet and astringent, with a fresh vegetable note.
How to use it
Its very rich taste makes it perfect to combine with legume and cereal-based preparations such as hummus.
It can be the unexpected ingredient for your culinary preparation like a tuna sauce, a green sauce (for boiled meat!) or a mayonnaise. Use it to create a sweet and sour sauce along with sesame, mustard, cumin, oil, salt and vinegar.
